TASTY DISHES AND SNACKS FROM LEFTOVER RICE

leftover-riceYou cook more rice than you need and realize there is a lot left. Refrain from finding the easy way out by dumping it in the dustbin. You can turn the leftover into another healthy and tasty dish.

 

1.     1. Vegetable Fried Rice

This is my favourite leftover rice dish as it is easy to cook. Heat sesame oil in the frying pan. Toss some garlic and onions and fry till transparent. Add mushrooms, celery, capsicum, broad beans and baby corn in. Add 2 tbsp oyster sauce and mix well. Add leftover rice and mix with soya sauce. Add cracked pepper to taste. For variation, I like to add pineapple cubes or stripped omelet on he rice.

 

 

2.     Stuffed tomatoes with rice

For a lighter dish, I would recommend the above. Vegetarian stuffed tomatoes are a healthy side or main dish for dinner. Tomatoes are stuffed with a spiced rice mixture and then baked. For a more filling meal, you could also add a bit of fried tofu to the rice mixture. This recipe would also work well for making stuffed bell peppers instead of stuffed tomatoes.

You will need:

 

  • 4 large firm ripe tomatoes
  • 2 tbsp olive oil
  • 1/2 cup onion, diced
  • 2 cups pre-cooked rice
  • 1/3 tsp allspice
  • salt and pepper to taste

 

Preparation

Pre-heat oven to 350 degrees.

Cut 1/2 inch off tops of tomatoes. Use a small knife to gently scoop out the insides of the tomatoes, being careful not to cut through the bottoms.

Sautee the onions for a few minutes in olive oil, until soft.

In a large bowl, combine the rice with the remaining ingredients, then combine the sauteed onions as well.

Using a small spoon, scoop the rice mixture and stuff each tomato. Gently pack in the rice, so the whole tomato is full.

Lightly brush the tomatoes with a bit olive oil and place in a baking dish.

Bake for 25 minutes.

 

 

3.     Rice cakes

 

You will need:

·         1 cup rice

·         4 eggs

·         1/2 cup Wheat flour

·         2 tbsp sugar

·         ¼ tsp salt

·         ¼ tsp cinnamon

·         Salt

Preparation

Put all the ingredients in a mixer to make the batter. Pour this batter in a non stick pan and cook evenly on both sites. Serve hot with chutney or mint sauce.

 

4.      Rice snacks

This is ideal to serve to guests or eaten for tea. You will need 2 cups of leftover rice, 1 large egg, 1 cup of shredded mozzarella cheese, 1 tbsp of grated parmesan cheese, 1 clove garlic, 1 tsp Italian herbs. Preheat oven to 325 degrees Celsius. Mix all ingredients. Press mixture into 9×13 inch baking pan, greased, and bake until crispy. Remove from pan and cut into little squares. Serve as snack or appetizer.

Rice is versatile and the possibilities of creating a new dish with leftover rice are endless. You need the right ingredients as well as creativity to turn your bland leftover rice to a new tasty dish for the whole family to enjoy.
